Healthy Humpday – Pico de gallo

This  time of year vegetable gardens are finally starting to produce! In our office, Heather has a full-size garden while Lori nurtures her tomatoes and peppers in container gardens on the deck (less of a chance for the deer to feast!) One of our favorite HEALTHY summertime condiments or snacks is Pico De Gallo (Fun Fact: pico de gallo literally translates to “rooster’s beak”!) , a zesty blend of homegrown tomatoes, jalapeno, onion, lime juice and cilantro. Oftentimes we will double or triple the recipe so that we have enough for snacking with chips as well as a topping for a Southwest chicken salad!
Ingredients

  • 1 cup tomatoes, seeded and diced
  • 1/4 cup minced onion
  • 1 TB fresh lime juice
  • 1/2 or 1 jalapeno seeded and diced (to your heat preference)
  • 2 TB cilantro
  • Salt to taste
Let’s Make It!
  1. Toss all ingredients together in a bowl; chill until ready to serve. Makes 1 cup (per 1/4 cup: 13 calories).
