We’ve gotten a lot of requests lately for weeknight meals that are not only healthy, but quick and easy to prepare (especially during the busy fall sports schedules!). Denise, our dental treatment coordinator/assistant, came up with the following recipe to solve feeding her hungry family on those busy nights. On Sunday, she simply assembles all of the ingredients in a bowl, covers it with Saran wrap, and places it in the refrigerator. When they get home from practice, all she has to do is ladle out bowls of soup, microwave, and viola…dinner is served! Add a side salad or carrots and dip for the kids and the meal is even more complete!
Ingredients
- 2 cans mixed vegetables, drained
- 1 box low sodium beef, chicken, or vegetable broth
- 1 package fully cooked shredded pork or beef
Assemble all ingredients in a soup pot and heat for immediate use or cover with plastic wrap and refrigerate for a post-practice meal in a minute!
