Healthy Humpday – Holiday Snacks

Everyone is familiar with the usual buffet of heavy and often unhealthy snacks at holiday gatherings… cheeses, dips, candy, cookies, chips and crackers- the list is never-ending. Why not try some healthy holiday snacks ( 10 great ideas here) at your next occasion? This past week, Dr. Kitzmiller’s team decided to try some healthier choices during an in-house training session. The reviews were great!

Kristy brought in corn and black bean dip that the team used both as a healthy dip as well as a topper for a light salad. Delicious!

Kristy’s Corn and Black Bean (Salad or Dip)

  • 2 cans corn, drained
  • 2 cans black beans, rinsed and drained
  • 1 red bell pepper, chopped
  • Sliced green onions
  • 4 ounces feta cheese

Toss all ingredients together in a bowl with dressing. Cover and refrigerate until ready to serve. Great with baked tortilla scoops or wedges.


  • 1/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1/3 cup sugar

Mix dressing ingredients over low heat in saucepan until sugar is just dissolved; cool. Toss dressing with corn and black bean mixture.
