We love the flavors of the Southwest and this dish really delivered on flavor! This salad is great on its own with tortilla chips, but as part of a main dish with grilled chicken (or flank steak!), it really adds a dimension of flavor! The healthy blend of ingredients allows for guilt-free snacking compared to just opening a jar of pre-made salsa at the store.
Ingredients 1- 15 oz can whole kernel corn, drained
1- 15 oz can black beans, rinsed and drained
1 cup diced tomato
1 bell pepper, diced
1 tbsp finely diced jalapeno
1/2 cup diced onion
2 tbsp chopped cilantro
2 tbsp vinegar
1/2 tsp chili powder
1 tsp cumin
Juice of one lime
Salt and pepper to taste
