Healthy Humpday – Southwestern Black Bean and Corn Salad

We love the flavors of the Southwest and this dish really delivered on flavor! This salad is great on its own with tortilla chips, but as part of a main dish with grilled chicken (or flank steak!), it really adds a dimension of flavor! The healthy blend of ingredients allows for guilt-free snacking compared to just opening a jar of pre-made salsa at the store.

Ingredients southwestern black bean dip ingredients1- 15 oz can whole kernel corn, drained
1- 15 oz can black beans, rinsed and drained
1 cup diced tomato
1 bell pepper, diced
1 tbsp finely diced jalapeno
1/2 cup diced onion
2 tbsp chopped cilantro
2 tbsp vinegar
1/2 tsp chili powder
1 tsp cumin
Juice of one lime
Salt and pepper to taste

  1. Combine all ingredients in a bowl and cover with plastic wrap.
  2. Refrigerate until ready to serve!
